Instructions to make Dhokla:
- In a mixing bowl take besan,suji, salt, sugar,and citric acid mix very well with water and make smooth batter (maintain proper consistency of batter like pakora batter)
- Rest it for 10-15 min. Meanwhile Grease plates or thalis using oil.
- Pour approx 2-3 cups water in steamer at bottom and heat it over medium flame for 5-6 minutes.
- After 15 minutes mix the batter again if require add 1 tsp water. Just before steaming add baking soda mix nicely. Transfer the batter in greased plate.Placing the plates (filled with batter) in steamer.
- Steam the batter on medium flame for 20 minutes.(after 15 minutes check the dhokla)turn off the flame.
- Heat oil in a small pan Add mustard seeds, once seeds crackle, add curry leaves, green chilies. Sauté for few seconds Mix nicely. turn off the heat. - Pour this tempering over the dhokla.
