The ingredients needed to make Tawa Pulao:
  1. Make ready Basmati rice , uncooked
  2. Make ready Ginger-garlic paste
  3. Prepare onion medium , chopped
  4. Make ready cauliflower medium head of , cut into small florets
  5. Take green chillies , finely chopped
  6. Get green beans , cut into pieces 1/2 Cup
  7. Make ready carrots , diced
  8. Take green bell pepper small (capsicum), diced

  17. Make ready cumin seeds (jeera)
  18. Get cardamoms green
  19. Take cloves
  20. Prepare cinnamon piece of (1 inch)

Steps to make Tawa Pulao:
  1. Gently wash & soak basmati rice for about minimum 15 minutes.
  2. Cook the basmati rice using the boiling method till just cooked. Add salt, 3-4 cloves and 2 green cardamoms in the water to flavour the rice as it cooks. Drain the rice and then spread the cooked rice in a plate and drizzle some oil over it to prevent rice from sticking.
  3. Parboil the cauliflower, green beans and carrots in salted water. Drain and keep aside. Don’t overcook the vegetables. They should retain crunch.
  4. In a large wok or kadhai, take 1 tablespoon of ghee. Fry the cashew, almonds and raisins and keep them aside.
  5. Add the oil in the remaining ghee. Add the cumin seeds, cinnamon, cardamoms and cloves. As soon as the cumin seeds splutter, add the onions, green chillies and ginger-garlic paste. Cook the onions till softened. Don’t let it brown. Keep the heat fairly high during the cooking.
  6. Next add the vegetables you are using and cook them for 5-6 mins. Add 1/2 tsp of salt, biriyani masala, garam masala, mint and coriander leaves. Toss it all to mix well. Toss in the nuts and raisins.
  7. Finally add the rice and toss gently to mix, taking care not to break the rice. Add the freshly ground black pepper. Adjust salt to taste. Cook for few more minutes till the rice is heated through.
  8. Serve hot with raita and pappad.
