- If your using some frozen veg make sure its defrosted and dried (or the water will fill the tray and sort of boil instead of roasting)
- Add the cubed potatoes to boiling water and add the chopped carrots too just to part boil for 1 minute then cool them fown and dry them off
- In a shallow tray oven oroof line it with Tin foil and rub all over with some of the olive oil to grease the dish add the potatoes,green beans and carrots spread out
- Then add the corn
- Then some salt and pepper all over and the Basil and some of the sprigs of Rosemary and sweetcorn

- Then the rest of the salt and pepper

- Then add a few slices of Courgette,s (mine where dried if they look shrivelled but tasty) fresh yes.
- Pour the olive oil all over and save some back.
- Add the tray to a preheated oven 170 quite high after 10 minutes bring them out move the veg around a bit then pour the rest of the vigin oil all over
- Place back in the oven for another 10 minutes on a lower heat 160.
