- Get 1 handful curry leaves
- Prepare green/red chillies (optional)

Chicker liver is hubby's favorite, I am not so fond of it. But he loves it more than anything else. Even in the chicken curry which I make, he looks for that liver piece. So I thought to make a simple dish with his favorite ingredients.
Steps to make Saucy Chicken Liver Masala:
- Soak your liver in water and vinegar for a few mins. Wash it off.
- Marinate liver with ginger/garlic paste, chilli powder, tumeric, coriander and garam masala and set aside for 30mins.
- In a pot, add oil, curry leaves, onions and mustard seeds and fry on low - medium heat. Add your whole green/red chillies (optional)
- Pour in your marinated liver.
- Saute for 5 minutes. Then add in salt.
- Add in your chopped tomatoes, mix well and let it cook till the tomatoes soften.
- Liver is ready to serve!
- Note: You can skip the tomatoes and do a dry fry - still as delicious.
And guess what he loved it a lot. The liver and heart can be bought separately. So now I have put it back on my monthly menu. It will do a world of good to me and my family and maybe we can beat the high cholesterol that comes with it by running that extra mile on the treadmill (which is like never! Vinegar is added in the marinade, to eliminate any smell from liver.
