The ingredients needed to make Claypot rice:
  1. Prepare 100 g Jasmine rice
  2. Get 50 g Chinese sausage (là cháng) and/or Chinese bacon (là rou)
  3. Make ready 50 g Chinese greens (bái cài, jìe lán,…)
  4. Take 15 ml light soy sauce
  5. Prepare 10 ml fish sauce
  6. Prepare 5 ml dark soy sauce
  7. Take Scallion
  8. Take 5 g sugar
  9. Get Sesame oil

Originally, claypot chicken rice is cooked using a claypot. But since I do not own one and it does not seem useful if I do own one because I do not have a gas stove at home. The rice cooked using a claypot has a wonderful smoky flavour and a nice crust which I just can't achieve using a rice cooker. Traditional claypot rice has a smoky aroma because of the claypot, and it creates a crispy layer of crispy rice that all will love.

Instructions to make Claypot rice:
  1. Soak the rice in 225 ml water for 1h.
  2. Slice the sausages and/or bacon and divide the vegetables into smaller pieces if needed and arrange them on top of the rice.
  3. Cover, bring to boil then lower the heat and simmer for 10 minutes.
  4. Mix the sauce ingredients and add them evenly to the rice. - Cover again and simmer for another 5 minutes.
  5. Add chopped scallion and sesame oil to taste, then stir everything together.
