- Prepare 100 g Jasmine rice
- Get 50 g Chinese sausage (là cháng) and/or Chinese bacon (là rou)

- Prepare 10 ml fish sauce
- Prepare 5 ml dark soy sauce

Originally, claypot chicken rice is cooked using a claypot. But since I do not own one and it does not seem useful if I do own one because I do not have a gas stove at home. The rice cooked using a claypot has a wonderful smoky flavour and a nice crust which I just can't achieve using a rice cooker. Traditional claypot rice has a smoky aroma because of the claypot, and it creates a crispy layer of crispy rice that all will love.
Instructions to make Claypot rice:
- Soak the rice in 225 ml water for 1h.
- Slice the sausages and/or bacon and divide the vegetables into smaller pieces if needed and arrange them on top of the rice.
- Cover, bring to boil then lower the heat and simmer for 10 minutes.
- Mix the sauce ingredients and add them evenly to the rice. - Cover again and simmer for another 5 minutes.
- Add chopped scallion and sesame oil to taste, then stir everything together.
