  11. Prepare 4 tablespoons Miso *dark colour Miso is recommended
  12. Take 1 tablespoon Soy Sauce

  14. Prepare 2 tablespoons Mirin
  15. Take 4 tablespoons Water
  16. Get 2-3 teaspoons Toban Djan (Chili Bean Sauce)
Steps to make Jaa Jaa Udon:
  1. Combine all the sauce ingredients in a small bowl.
  2. Slice Lettuce, Cucumber and Spring Onion into thin strips. They will be used as toppings.
  3. Heat Oil in a frying pan and cook Pork Mince and Ginger. When Pork changed colour, add Shiitake and Spring Onions, then add the sauce. Cook until the sauce is thickened.
  4. Cook Udon as instructed, and drain well. Place Udon in a bowl, cover with the pork mixture, place some Lettuce, Cucumber and Spring Onion on top and serve.
