Instructions to make Kheer:
  1. Wash & soak rice for minimum 30 min. (Toota chawal are best for kheer).do not use sella rice for kheer.
  2. Boil 2 litre milk.as soon as milk boiled add soaked rice in it & stir to incorporate.open Illachi pods & take out seeds.add seeds in milk. Let it cook at low-medium heat.
  3. Continue stirring in between.milk start to get reduce.rice are getting cooked in milk gradually.check texture time to time.
  4. When Milk is reduced & rice are cooked soft tender.it's time to add sugar.first take out spoonful of milk at plate,if it dnt flow & get stuck at plate (jama jama sa lagy) then it's right time to add sugar.as shown in pic below.
  5. Add sugar,stir continuly.flame should be low-medium. Dnt stop stirring spoon bx sugar will start stiking to bottom in no time.add kewra as well.
  6. After adding sugar,just give 2 boils in milk with continue stirring & thn turn off flame.take out in bowls & let it cool at room temperature first then in fridge. Garnish with slivers of almonds & pistachio.serve chilled & enjoy.
