  1. Get 500 grams mince
  2. Make ready 1 slice bread (or more to make more / bigger meatballs)
  3. Get 1 milk (to cover bread with)
  4. Take 1 tsp salt
  5. Prepare 1 tsp parsley
  6. Take 1 cup cheese (any kind you like)
  7. Take 250 grams streaky bacon
  8. Make ready 8 toothpicks
  9. Prepare 1 oil (for frying)

In a large bowl, mix together the ground beef, bacon, egg, cheese, garlic, basil, parsley, salt, pepper and breadcrumbs. This is essentially a bacon cheeseburger in meatball form. The cooked steak should be diced into small bites, not ground, for the best texture. In a large bowl, combine steak, ground beef, cooled bacon and onions, cheese, eggs, bread crumbs and salt, and mix lightly but thoroughly by hand.

Instructions to make Bacon and cheese meatballs:
  1. Preheat the oven to 180C.
  2. Break the bread in big-ish pieces into a bowl. Cover with enough milk so the bread soaks up all the milk.
  3. Place the mince in a seperate bowl and add the salt, parsley and cheese. Mix well.
  4. Mash the bread with a fork to incorporate all the milk.
  5. Add the bread mixture to the mince mixture and mix well.
  6. Roll the mixture into balls and cover with bacon, secure with a toothpick.
  7. Pour oil into an oven save dish and place the meatballs evenly in the dish. Bake in the oven for 20 - 30 minutes or until the bacon is crispy. (You can fry them on the stove top as well but I find that they break easily.)

I had some leftover beef and cheese…and yes, even bacon so this just made sense! What is really great about these meatballs is that they have a different flavor than most meatballs that I have tried.
