- Prepare as per taste salt
Bharwa bhindi (in hindi bharwa = stuffed, bhindi = okra) is a versatile recipe and the ingredients I am posting bharwa bhindi recipe with besan, onions and loads of peanuts which lend a lovely crunch. Although it is a Punjabi thing, it is prepared across the country and therefore it is prepared in many different ways. - Add in ginger and roast it.
- When the coconut become dry add in all the powdered ingredients for the stuffing and roast it until golden brown.
- Put the roasted peanut in a mixer and pulse it 3-4 times. Add in the besan and the roasted coconut mixture along with it and grind it.
- Make a slit in the middle of the bhindi and stuff this filling in it. [ keep some stuffing aside]
- Pour oil in a pan and saute this stuffed bhindi and cover it and cook for 2-3 minutes. fry it until dark green.
- Then pour oil in wok and crackle cumin seeds and add onions, green chilli and ginger. Saute it until the onions become brown.
- Add chopped tomatoes and leftover stuffing mix in this, mix well and cook for 3-4 minutes.
- Then add salt and enough water into it and cook until the tomatoes are done.
- Then add the fried okra/ bhindi into this and mix gently.cover and cook for 1-2 minutes.
- Garnish with coriander leaves and serve.
