For starters, this Chole is a spicy & tangy. combination of chole masala and bhatura recipe. traditionally a bhature according to your pan size. also, while deep frying bhature, make sure your oil is on high heat. otherwise the bhature would not.

- Prepare 400 gm Chickpea/white channa
- Get 4 pieces Gooseberry dried/sukha amla

- Make ready 1 1/2 tsp Chole masala
- Prepare 1 tsp Carom seeds/ajwain
- Prepare 2-3 Green chilli/hari mirch
- Prepare 1 Black cardamom/badi elaichi
- Make ready 1 inch Cinnamon stick/dalchinni
- Get 1 Bay leaf/tej Patta
- Make ready 2 Clove/long
- Take 3-4 Black pepper/Kali mirch
- Get 4 tbsp Oil
- Get for garnish
- Get 2 tsp Fresh coriander leaves
- Take 1 Onion chopped
- Prepare bhature ingredients
- Prepare 2 1/2 cup Maida/All purpose flour
- Get 2 tsp Sugar
- Make ready 1/2 tsp Baking soda
- Take 1 tsp Baking powder
- Take 1 tsp Salt
- Make ready 5 tbsp Oil
- Prepare 5 tbsp Yogurt / Dahi
- Make ready as needed Oil to deep fry the bhatura
I enjoy eating hot chole with tikkis, bhaturas, kulcha or simply topped on a slice of bread. Chole Bhature is my father's favorite recipe. It is made with chickpeas, and a delicious fried bread. Chole Bhature recipe with step by step photos.
Instructions to make Chole bhature:
- Chickpea Boiling Method
- Rinse and soaked white chanaovernight.
- Drain water and transfer to a pressure cooker.
- Add water, Gooseberry/amla, Black cardamom/badi elaichi, cinnamon stick/dalchinni, soda and place over medium flame.
- After 2 whistle simmer for 30 minutes.
- Once done drain chickpea water and reserved the water in a bowl.
- Chickpea tadka
- Heat a wok over medium flame and add oil.
- Add cumin seeds,bayleaf,clove, black pepper and saute.
- Now add onion paste, ginger paste,garlic paste and saute for 3 - 4 minutes over low flame.
- Once onion turn brown add red chilli powder, coriander powder, chole masala, salt and saute until oil start leaving sides.
- At this stage add tomatoes puree and cook for another 5 to 10 minutes or until it starts leaving sides.
- Now add Carom seeds/ajwain and slit green chilli and saute.
- Lastly add boiled chickpeas along with 3 cups of the reserved water and cook.
- Bring to a boil till the gravy has very little water.
- Garnish with coriander leaves and chopped onions.
- Bhatura method
- In a large plate pour maida.
- Add sugar, baking soda, baking powder, salt, oil and yogurt.
- Using your hand start kneading to form soft dough and add water as required to form a soft dough.
- Once done grease the dough with oil. Place it in a bowl and cover the dough with a samp cloth and keep aside for 2.5 hours.
- After 2.5 hours the dough is ready to roll. Divide the dough into equal portions approximately 14 to 15 portions.
- Take 1 portion at a time and start rolling the dough using a rolling pin.
- In a frying pan, heat the oil on high flame.
- Deep fry them until they are golden in colour. Keep pressing and flipping the bhatura lightly.
- Serve hot.
