Instructions to make Chana Pulao:
  1. Soak brown chana overnight and then boil it with salt and water.
  2. Wash the rice well and then discard water.
  3. Heat ghee in a pressure cooker and add cinnamon stick, cardamom, cloves and bay leaf.
  4. Add sliced onion, cook for 2-3 minutes or until onion softens.
  5. Now add chilli, turmeric and garam masala powder.
  6. Add boiled chana and salt.
  7. Add washed rice, mix well and cook for a minute.
  8. Add water, kewda essence and saffron strands.
  9. Close the lid of cooker and cook for a whistle.
  10. After releasing the pressure open the lid, garnish the pulav with fried cashews, raisins and dry coconut pieces.
