  5. Heat oil in a heavy bottom pan. Add in jeera once jeera start crackling, add green chilli.
  6. Now add bhindi in which you have added all the masala already.
  7. First 2-3 mins fry it without covering to make sure there is no moisture and all pieces should cover with oil and masala evenly.
  8. Now cover and cook for 15 mins.keep stirring in every 4-5 minutes.
  9. After 15 mins open the lid and check if it is cooked or give little more time to cook. Once cooked remove the lid add in garam masala.
  10. Transfer in serving bowl.
  11. Note- it is important to dry bhindi completely,otherwise it will leave starch and will be difficult to handle. Adding amchur powder in the beginning is important as it helps in controlling the starch. You can cut it in any shape of your choice, I cut length wise just because it is fast for me.
