- Prepare 1/2 litre milk
- Take 150 gm khoya or mawa
- Get 1/2 cup sugar

- Take 1/4 tsp Kesar(safforn) mix powder (optional)
- Prepare handful Dried fruits to garnish
- Get 2 tsp Rose petals to garnish
- Take 800 ml Ghee/oil to fry

- Take a big mixing bowl… add ghee and ice cubes.
- Rub in the ice cubes until ghee thickenes.. remove the ice and keep whisking the mixture until fully creamed.
- Add in the maida and mix tocobtain a crumbly texture. Add in the chilled milk.
- Mix well then gradually add and mix chilled water little at a time.add in the lemon juice mix well.the batter should be very thin and flowing.Set in the fridge for 10 mins. to chill.
- Meanwhile heat up ghee (3/4th filled) in a round vessel or frying pan. Pour in a ladle full of batter in the center of hot ghee from some height. After 2 secs again oour in same amount same way. Repeat it 15_20 times for one ghevar. Browning at the bottom indicates ghevar is cooked.
- Take it out from ghee. Make all the ghevars. Keep aside.now boil water and sugar…make one string consistency sugar syrup. Stack the ghevars and pour chashni over them.
- Now lets make rabri… heat up the milk.. add khoya let it cook a bit.. add sugar, cardomom powder etc and let it simmer on low.. stirring in between until it thickens.let it cool a bit.
- Spread it on top of the ghevars. Garnish and serve. ENJOY!!!
