- Make ready 8 okra/ladies finger/bhindi

- Take 1 tbsp sesame seeds
- Make ready 1/4 tsp ginger paste
- Get 1 tsp red chilli powder
- Make ready 1 1/2 tbsp coriander powder
- Take 2 tsp garam masala
- Make ready 1 pinch hing / asafoetida
- Prepare 1 1/2 tsp aamchoor
- Prepare 1/2 tsp goda masala
- Make ready as per taste salt
Steps to make Bharwa Bhindi [ gravy]:
- Wash and pat dry bhindi/okra.
- In a pan roast besan and keep aside.
- Dry roast peanuts and keep it aside.
- Pour a little bit of oil in a pan and add sesame seeds and roast it and then add grated coconut.
- Add in ginger and roast it.
- When the coconut become dry add in all the powdered ingredients for the stuffing and roast it until golden brown.
- Put the roasted peanut in a mixer and pulse it 3-4 times. Add in the besan and the roasted coconut mixture along with it and grind it.
- Make a slit in the middle of the bhindi and stuff this filling in it. [ keep some stuffing aside]
- Pour oil in a pan and saute this stuffed bhindi and cover it and cook for 2-3 minutes. fry it until dark green.
- Then pour oil in wok and crackle cumin seeds and add onions, green chilli and ginger. Saute it until the onions become brown.
- Add chopped tomatoes and leftover stuffing mix in this, mix well and cook for 3-4 minutes.
- Then add salt and enough water into it and cook until the tomatoes are done.
- Then add the fried okra/ bhindi into this and mix gently.cover and cook for 1-2 minutes.
- Garnish with coriander leaves and serve.
