This is one for the mushroom lovers and a great meatless main that can be made with only a few simple ingredients, including grainy mustard, which is one of my favourites for flavour. Add in chicken stock and mustard, and whisk until combined, scraping bottom of pan to release fond. Salt and freshly ground pepper ; to taste. handful flat-leaf parsley ; chopped. Combine the crème fraîche and mustard then add to the meatball mixture.

- Place the sausages on a slightly oiled baking tray, cover with foil and cook in the oven for 20 mins.
- Meanwhile slice the onions and mushrooms. Heat in a pan with the remaining olive oil on a medium heat until nearly softened. Add the crushed garlic. Add the spinach and continue to cook until the spinach is wilted. Remove from the heat.
- After 20 mins, Turn the sausages and discard the foil. This will allow them to start to brown. Cook for a further 20 mins or until cooked through.
- Cut the sausages into chunks in the pan of onions and mushrooms. Heat over a low heat.
- Once the onion and mushroom mixture has heated back up, add in the double cream. Heat for a further two minutes before stirring in the stock cube. Then stir in the wholegrain mustard.
- Season with pepper, cover in Parmesan and serve.
Heat until the sauce is hot through. Mix with the pasta and garnish with parsley to serve.
