The ingredients needed to make Hot Brown:
  1. Make ready 1/4 c butter
  2. Make ready 1/4 c flour
  3. Prepare 1 quart heavy cream(or 8 oz h.c. and 8 oz whole milk)
  4. Get 1/2 cup pecorino romano cheese (+ some for topping)
  5. Get 14 oz roasted turkey breast
  6. Take 4 slice Texas toast, crusts trimmed*
  7. Get 4 slice crispy bacon
  8. Make ready 2 roma tomatoes, sliced
  9. Take 1 salt, pepper, & nutmeg to taste
  10. Make ready 1 paprika & parsley to taste
Steps to make Hot Brown:
  1. In a 2 Qt. saucepan, melt butter and slowly whisk in flour until it forms a thick paste. Continue to cook on med heat for 2 minutes, stirring frequently.
  2. Whisk heavy cream into mixture, bring to simmer for around 2min.
  3. Remove sauce from heat and slowly whisk in pecorino romano cheese until the Mornay sauce is smooth.
  4. Add salt, pepper & nutmeg.
  5. Assemble Brown using bread, turkey, tomatoes. Pour sauce over all. Sprinkle with additional cheese.
  6. Place in oven at 350°for about 20min or until cheese is brown and melted.
  7. Top with bacon. Sprinkle with parsley and paprika and serve.
  8. I have used artisan rosemary bread as well for an added pop of flavor.
