  1. Zest the lemon into the tahini, then juice the lemon (remove pips) and combine with the tahini. Stir to a smooth paste
  2. Add chickpeas to a sauce pan and cover with water and bring to a boil, peel and chop the garlic then combine garlic with a pinch of salt and the tahini paste to a food processor and blend to a smooth consistency.
  3. Pour in the olive oil while the processor is still running until fully combined, then using a slotted spoon add the hot chickpeas (keep the water in reserve. Taste and season mixture and if it is a little too thick for your liking pour in a little of the hot water to your desired consistency.
