- Slit brinjal/eggplant.Smear little mustard oil and heat roast it on direct flame.Keep turning it time to time till it is roasted from all sides.Peel the roasted outer skin and mash it.Heat oil in a pan and lightly fry minced garlic and onion.Add tomato,green chilli and chopped capsicum and sauté.Then add the mashed brinjal pulp and salt to taste.
- Mix well and fry for a minute.Sprinkle chopped coriander and serve hot with chapatis or any Indian flat bread.
