  1. Note: this is a very strong banana-flavored dish… if you don't like the taste of bananas, you really won't like this. I strongly suggest making just a couple to try before doing a large batch, even if you DO like bananas. I made the four in the photo using only one cookie piece! I also have no idea how well or long these will keep, because mine didn't last more than a few minutes, but I think the moisture from the bananas will make the cookie soggy after a short while.
  2. preheat oven to 325°F.
  3. lightly cover working surface with confectioner's sugar
  4. roll one sugar cookie 'piece' very thin (it was easiest to cover hands with confectioners sugar and squash flat before rolling with a rolling pin)
  5. cut out quarter-sized circles of cookie-dough (you may find this easiest if you use the lid from a 2-liter soda bottle like a tiny little biscuit cutter)
  6. place bananas on foil-lined baking sheet, approximately 1" apart
  7. cover each banana slice with a round of dough and put pan in oven.
  8. cook until cookie dough is done (time will vary, so keep an eye on them)
  9. remove from oven and sprinkle lightly with cocoa powder and cinnamon
  10. allow to cool
  11. enjoy!
