  2. Get 3 tbsp lemon juice / vinegar

Making Sandesh: Once the paneer is drained, place on a dry, clean surface and knead the paneer until the paneer is almost rolls into smooth soft dough. (History of Bengali Sandesh).   3. Tie prepared chhena in a muslin cloth. Squeeze it gently to drain the water and hang it for 30 minutes to drain the water.Do not hang it for longer than 30 minutes otherwise it will become dry. After draining water, untie it.
  4. Mix the paneer and milk powder in a pan and cook on a medium flame stirring continuously for 3 to 4 minutes.
  5. Allow the mixture to cool. Add sugar, pistachio essence, and cardamom powder and mix until a smooth dough is formed.
  6. Lightly grease the molds with ghee.put little dough on it.
  7. Chill for a few hours, unmould carefully and serve.

Sandesh (Bengali: সন্দেশ Shôndesh) is a dessert, originating from the Bengal region in the eastern part of the Indian subcontinent, created with milk and sugar. Some recipes of Sandesh call for the use of chhena or paneer (which is made by curdling the milk and separating the whey from it). Bengali Sandesh is basically a sweet moist fudge made from Indian cottage cheese (paneer). I always prefer making fresh and homemade paneer for preparation of other Sweet dishes.
