Instructions to make Chapdi Tavo undhiyu:
- For chapdi dough, in a bowl take some wheat flour, add Rava, cumin, white sesame, salt, oil, and with the help of some water make a tight dough and put it a side for 5-10 mins
- With the dough take small proportions and press in your palms making them flat. Don’t make them too thick or thin we want it to be medium
- Take a pan and heat some oil. In medium heat now fry the chapdis
- For the undhiyu, in a pressure cooker, take some water, add all the mixed beans and cook for 3 whistles.
- Take another pressure cooker and add all the Vegetables with some water and cook for 3 whistles
- Now take a pan and heat oil. Add cinnamon sticks, bay leaf, clove, whole red chilli, and a pinch of hing, chopped onions. Sauté for a few mins and add your ginger garlic paste and sauté for 2 mins
- Now add you tomatoes, and sauté for few mins until they are soft
- Next add all the spices and undhiyu garam masala. Mix well and sauté for few seconds
- Now add all the boiled vegetables, mixed beans, salt and water. Boil for 2 mins
- Now add chopped coriander. And 1 tbsp lemon juice
- Your undhiyu is ready
- Serve hot Chapdi Tavo with onions and garlic chutney.
