  5. Prepare 1 tsp Red Chilli Powder
  6. Take 3/4 tsp Turmeric Powder
  7. Get to taste Salt
  8. Prepare 1/4 tsp Sugar
  9. Make ready Refined Oil to shallow fry
  10. Make ready 3/4 tsp Mustard Seeds
  11. Take 1/4 tsp Asafoetida Powder
  12. Prepare 2 Green Chillies, slit from between
  13. Prepare 2 tbsp Fresh Coriander Leaves, chopped
  14. Make ready 6-8 Curry Leaves
Instructions to make Dahi Baingan / Baingan ka Raita:
  1. Wash, dry and cut the eggplant into neatly cut medium rounds.
  2. Rub red chilli powder, turmeric powder & salt on the eggplant rounds. Set aside to sweat for 15-20 mins.
  3. Whip the curd, add the sugar and salt to taste. Crush the garlic cloves lightly, add to the curd. Set aside in the fridge to cool.
  4. Sprinkle the besan on the marinated eggplant, rub it all over.
  5. Shallow fry the eggplant rounds in hot oil until golden brown and crisp on both sides.
  6. Drain on tissue paper.
  7. Heat 1 tbsp oil in a tadka pan, add the mustard seeds, asafoetida, green chillies and curry leaves. Allow it to crackle for a few seconds.
  8. Pour this sizzling tadka into the chilled curd mix.
  9. Add the fried eggplant at the time of serving. Garnish with chopped fresh coriander.
  10. Serve with a regular meal of Dal, Rice, Roti & Sabzi on the side.
