- Take 1 medium sized Round Bharta Baingan
- Make ready 500 gms thick Curd
- Get 2-3 Garlic Cloves
- Take 2 tbsp Besan / Gram Flour
- Prepare 1 tsp Red Chilli Powder
- Take 3/4 tsp Turmeric Powder
- Get to taste Salt
- Prepare 1/4 tsp Sugar
- Make ready Refined Oil to shallow fry
- Make ready 3/4 tsp Mustard Seeds
- Take 1/4 tsp Asafoetida Powder
- Prepare 2 Green Chillies, slit from between
- Prepare 2 tbsp Fresh Coriander Leaves, chopped
- Make ready 6-8 Curry Leaves
Instructions to make Dahi Baingan / Baingan ka Raita:
- Wash, dry and cut the eggplant into neatly cut medium rounds.
- Rub red chilli powder, turmeric powder & salt on the eggplant rounds. Set aside to sweat for 15-20 mins.
- Whip the curd, add the sugar and salt to taste. Crush the garlic cloves lightly, add to the curd. Set aside in the fridge to cool.
- Sprinkle the besan on the marinated eggplant, rub it all over.
- Shallow fry the eggplant rounds in hot oil until golden brown and crisp on both sides.
- Drain on tissue paper.
- Heat 1 tbsp oil in a tadka pan, add the mustard seeds, asafoetida, green chillies and curry leaves. Allow it to crackle for a few seconds.
- Pour this sizzling tadka into the chilled curd mix.
- Add the fried eggplant at the time of serving. Garnish with chopped fresh coriander.
- Serve with a regular meal of Dal, Rice, Roti & Sabzi on the side.
