When the pastry is ready, take it out of the fridge and using a sharp knife or pastry cutter and cut it into 1cm slices. Lay the palmiers flat on the baking sheet and brush them with egg. Bake for 15 minutes or until lightly golden and puffed. Leave the palmiers to cool on the baking sheet
