Steps to make Egg Bhurji Puff:
  1. Make a soft dough out of maida, oil, salt and water. Smear some oil and rest it for 30 mins.
  2. In the meantime crack open the eggs in a bowl and whisk it well.
  3. Add oil in a pan, add cumin seeds and let it splutter. Add onion, ginger,garlic, green chilli, tomato, capsicum chopped and saute till the vegetables changes colour and well cooked. Add the dry masala- cumin, turmeric, kashmiri red chilli powder and mix well. Let the masala cook for 3-4 mins. Add the whisked eggs and salt. Mix well and saute till the egg dries out and form crumble like texture. Keep aside. Let it completely cool down.
  4. Knead the dough once again. Make medium size balls out of it. Apply some oil on the working surface. Take one ball and roll it vertically upward and downward.

  6. Place the egg bhurji mixture in the middle of the roll out dough like the shape of a line. Now take right side over the bhurji mixture and seal it with the left side horizontally. Now roll it inward with your hand like we do in lachha paratha. Flatten and dab it slightly.
  7. Place the egg bhurji mixture on the center like the shape of a line.
  8. Heat sufficient oil in a karai and deep fry the puffs on low flame for 6-7 mins for the puffs to cook thoroughly. Flip on the other side and again fry 7-8 mins until it becomes golden and crispy. Serve hot with tomato ketchup.
