This is my first Seitan, pronounced (say-tan) is often referred to as "wheat meat". You can find this in your local health food. Want to try. *Note–I made this once—you have to really keep the foil tight or it will open and a crust will form on the sausage. This seitan sausage recipe was adapted from Veggie on the Counter's Homemade Seitan Sausage recipe.

Instructions to make Seitan sausages:
  1. Finely chop and sauté the onion and garlic.
  2. In a food processor, blitz the chickpeas.
  3. Add the chickpea paste, onion and garlic, and other spices into a bowl with the wheat gluten. Mix well.
  4. Add in the water a bit at a time until the mix binds together and holds its shape. It'll have a tacky texture but you don't want it too wet.
  5. Divide into 10-20 pieces, depending on the size of sausage you want.
  6. Roll out each piece into a sausage shape and wrap up in foil. Twisting the ends like a sweet wrapper.
  7. Place in a steamer and steam for 40 mins.
