- Take 2 Bharta baingan(Bharta brinjal)
- Take 3-4 medium sized onions finely chopped

- Take 1 tsp red chilli powder
- Make ready 1 tsp dhaniya jeera(coriander cumin) powder

- Make ready 1/2 tsp amchur(dry mango) powder
- Make ready 1/4 tsp garam masala
- Take to taste Salt
- Make ready 2-3 tbsp oil
- Prepare 1/8 tsp Mustard seeds
Instructions to make Baingan Bharta:
- Wash and dry the brinjal. Apply some oil all over and cut it at centre and keep it for roasting on gas stove flame. Keep turning it after 3 minutes on flame, so that it is evenly cooked.
- Roast the baingan till it is completely cooked. Check with knife, it should slid easily inside baingan.Remove the baingan from flame and allow it to cool.
- Peel the skin from the roasted baingan.Mash the peeled baingan.
- In a Kadai, heat oil. Add mustard seeds and allow it to splutter.Then add chopped green chillies, ginger. Then add chopped onions and saute it till it turns translucent. Do not over fry them till it changes colour. Then add chopped tomatoes and mix well.
- Saute the tomatoes till oil starts separating from masala mixture. Now add mashed baingan. Mix it well with onion tomato mixture. Then add dhaniya jeera powder,red chilli powder, turmeric powder,amchur powder and salt. Mix all the ingredients well on low flame and keep on stirring.
- Add garam masala and stir well for 2 to 3 minutes. Finally garnishing with fresh chopped coriander leaves.
- Serve delicious Baingan Bharta with chapatis, phulkas.
