- Prepare 3 long variety eggplants
- Make ready 4 dried red chillies
- Make ready 1 inch cinnamon

Steps to make Baingan Lonje:
- First of all, dry roast red chillies, cinnamon, cloves and cardamom in a pan.
- Heat 2 tablespoon oil in a nonstick pan and add chopped onion to it. Saute onion until light pink in colour. Add sugar to it and caramelize it until light brown in colour. Now add ginger garlic paste to it and cook for 2 minutes. Let this mixture cool down at the room temperature.
- In a mixer jar, take roasted spices, onion mix, salt and black pepper powder and blend it into a smooth paste. Wash eggplants, pat them dry and cut them into half lengthwise.
- Now apply prepared paste to the eggplant pieces. Heat oil in a pan and arrange eggplant pieces in it. Cover and cook it for 5 minutes on medium heat. When it becomes light brown from bottom turn it around. Now again cover and cook until done.
- When the eggplants cook properly from both sides sprinkle lemon juice and turn off the heat.
- Garnish with some coriander leaves and serve hot with roti, dal and rice.
