Add fried potatoes and eggplant mix it gently, let it simmer for three to four minute on medium low heat.   1. Wash egg plants, and potatoes thoroughly, peel the potatoes, chop both egg plants and potatoes in cubes, put them in to water filled bowl.
  2. Chop onion, tomato, and keep curry leaves ready.
  3. Take a saucepan put it on medium flame, add 1 1/2 tbsp oil,add mustard seeds and cumin seeds, when it starts to splutter add chopped onion and curry leaves saute for two minutes.
  4. Now add chopped eggplants and potatoes, add turmeric powder, red chilli powder, coriander powder, salt, give it a mix add 1/4 cup water, close the lid and let it cook on low flame.
  5. When it's half done, open the lid add in the chopped tomato and garam masala powder, mix well, close the lid, cook again untill it's done. Garnish with some chopped coriander leaves.

Hi dassana I didn't add water but eggplants were not small instead of medium size.and to cook potato I had to cover the pan and brinjals got mushy. This is an easy curried eggplant potato - Aloo Baingan recipe. I picked it up from Mom and have been making my version of it for many years.
