The ingredients needed to make Achappam:
  1. Take 3 cups Rice powder (only the finest flour)
  2. Prepare 2 cups Coconut milk , thick
  3. Make ready 2 Egg
  4. Prepare 1 cup Sugar
  5. Make ready 2 tsps Seasame seeds
  6. Prepare Salt
  7. Prepare Oil for deep frying

Drain off excess oil and transfer to a paper. Put the achappam mould in the very hot oil. Dip three-fourth of the mould into the batter. Then, put it in the hot oil.

Steps to make Achappam:
  1. Sift the rice flour to get the finely ground flour.
  2. Powder the sugar in a mixer and keep it aside.
  3. Combine together the flour and coconut milk so that it makes a smooth  paste.
  4. Beat the eggs and add the egg, sesame seeds, salt and mix  well.
  5. Add sugar little at a time, mixing it in well and set aside for 30 minutes (the batter should be thicker than dosa batter).
  6. Heat the oil in a pan and place the achappam mould in the oil and allow it to be heated up. Make sure the achappam mould is completely immmersed in the oil.
  7. When the mould is hot, remove from the oil and dip in to the batter. Make sure the batter covers only 3/4  of the mould.
  8. Take it out  of the batter and immerse in to the  hot oil. When the batter is cooked it will detach itself from the mould. You may shake the mould slightly to free the achappam.
  9. Do the same with the rest of the batter.
  10. Turn both sides of the achappam and when the both sides turns light brown in color, remove from the oil and drain it on a kitchen tissue.
  11. Yummy achappams are ready!!!
  12. Store in an air tight container to keep the freshness.

The achappam will fall into the oil from the mould. Flip carefully to fry on the other side.
