- Preheat oven to 450
- Rinse catfish filets with water
- Fill a large bowl or gallon ziploc with beer and soak the catfish for a while (I went with around 20 minutes)
- Put all dry ingredients (black pepper, salt, seasoned salt, garlic powder, onion powder, and flour) into gallon ziploc bag and thoroughly mix them together.
- Take catfish out of the beer and put them in the dry ingredients (the beer will make them stick to the fish)
- Pour a layer of peanut oil in a skillet and get it bubbling (don't turn heat too high or it WILL produce smoke)
- Fry the catfish (2 minutes per side should suffice)
- Put a layer of aluminum foil on baking sheet and place filets evenly on it
- Bake for 10 minutes
