- Prepare 1.5 litre Milk
- Make ready 10-15 Spoon Milk Powder
- Get 6-8 Cardamom Pods
- Take 10 Lemon
- Take 10-12 Almond (Chopped)
- Make ready 200 gm Crystal Sugar
- Get Ghee (as much needed)
Steps to make Almond Elaichi Sandesh:
- Put milk in a bowl. Let it boil.
- Squeeze the juice of lemon and put it in a bowl. As milk starts boiling, add the juice.
- Milk starts curdling as soon lime juice is added. Add more juice only if needed.
- When greenish whey appears, extract the chana. Drain out the excess water from the chana.
- Put a bowl in oven. Add the chena in bowl. Add 4-6 spoon milk powder. Start mixing.
- Mix everything, make sure that lumps are not forming. Also don't let chana stick to the bottom.
- Add the crystal sugar. (Crystal sugar dissolves quickly, also doesn't make the mixture runny). Stir continuously.
- Crush the cardamom pods with a mortar-pestle. Put it in the same bowl. Add half of chopped almond.
- Keep the flame low and make sure to stir continuously.
- Take a plate. Brush ghee on the plate. Transfer the chana on the plate.
- Add around 6 spoon milk powder.(Add more only if needed). Start kneading. Make sure chana doesn't get dried.
- Grease palms with dollops of ghee. Make balls from the chana. Flatten them with palms. Put chopped almond,one in each. Keep in refrigerator for 10-15 minutes.(Make sure to cover it otherwise Sandesh will become dry).
