  2. In a pot heat oil up and put ginger, dried chili, shallot and spring onion fry till golden brown then remove from heat set aside

  4. In another pot lightly toast chili powder with Sichuan peppercorn till pop then off heat and pour the FIRST POT BOILING OIL and stir gently
  5. Keep all the ingredients in the chili oil for 3 days as it is
  6. After 3 days filter the oil and it's ready to be use
