Maddur Vada Recipe is a very popular savory fritter originated from a town called Maddur in the Mandya district of Karnataka. It is made usually from semolina, rice flour and whole wheat flour and is. It's been ages since I took any pictures, relying on old pictures to write posts now a days. Steps to make Maddur Vada:
  1. In a bowl add rice flour, Sooji. Add maida flour in a small pan and just roast till it gets warm. Add this to the rice flour. Mix it well.
  2. Add chopped onion, green chillies, ginger, Salt, red chilli powder,hing and mix well. Add 3 tbsp hot oil to this and mix it with a spoon. Now add chopped coriander and curry leaves.
  3. Divide this into two parts. Now take one part,add little water in parts and prepare a dough like for poori. Don't add more water and make it sticky. If it becomes then add maida and knead it.
  4. On a greased plastic cover, place a medium sized dough ball and with your fingers press it and make round patty with medium thickness. Heat oil in a kadai for deep frying.
  5. Now add a small portion of dough in oil if it comes up gradually then oil is perfect hot. Keep the flame on medium. Now remove it from plastic cover and carefully place it inside the oil. Fry this on medium flame so that it gets cooked from inside also.
  6. Let it get fried well from one side then only turn it. Don't hurry otherwise it will break. You can fry 2 to 3 vadas at a time depending on size of Kadai.
  7. Turn and fry till it gets crispy and golden brown. Similarly take another part of flour kept aside,knead it and make vada. We should not prepare dough from all the flour as it may leave water and become more moist. Has to be done in batches. Enjoy crispy Maddur vada with evening tea.
