  1. Get 45-50 fresh SPINACH leaves
  2. Get As needed Oil to deep fry
  3. Get 1 tbsp sesame oil or any other oil
  4. Take 1 tsp red chilli flakes
  5. Get to taste Salt
  6. Get 1 tbsp sugar
  7. Take 1 tbsp toasted white sesame seeds
Instructions to make Crackling Spinach:
  1. Wash the fresh spinach leaves and just dry with cotton cloth by lightly pressing.cut them into thin strips.
  2. Dry roast white sesame seeds for 1_2 min.Heat oil in a wok on Medium flame,deep fry the spinach strips till crisp.Take out on a tissue paper to absorb extra oil.
  3. In a pan heat sesame oil,add chilli flakes,salt,sesame seeds and sugar.add fried spinach.off the flame.mix well with light hands.serve the crackling spinach with pulao, rice,biryani etc
  4. It is used for garnishing pulao,rice etc
