  6. remove the steaks from the oven then transfer them to a separate plate. place the skillet on the stove over low heat.
  7. add in the brandy and Dijon mustard in the skillet and whisk together
  8. add in heavy cream and peppercorns, whisking to combine. allow it to bubble for about 45 seconds. I let mine go a bit longer but not much. maybe 2 minutes.
  9. spoon the sauce over the steaks and serve. enjoy!
