The ingredients needed to make Kadhi Vada:
- Make ready Kadi
- Take 3 cups buttermilk extracted while making homemade ghee OR
- Prepare 1 cup curd and add 2 cups water
- Make ready 1 teaspoon mustard seeds
- Take 1 teaspoon cumin seeds
- Get 1 pinch Hing
- Take 1/2 teaspoon methi seeds
- Get 15-20 curry leaves
- Get 1/2 inch ginger grated
- Get 2 green chillies chopped
- Get 2 dry red chillies
- Make ready 1 tablespoon oil
- Prepare to taste Salt
- Prepare 2 teaspoon Sugar optional if the buttermilk is sour
- Make ready 1/2 tablespoon gram flour (besan)
- Get leaves Coriander
- Get Vada
- Make ready 1 cup urad dal
- Make ready 1 teaspoon cumin seeds
- Prepare 1 small piece of ginger
- Take 1/2 teaspoon hing
- Make ready to taste Salt
- Get as required Oil for frying
Instructions to make Kadhi Vada:
- Soak urad dal for minimum 3 hours.
- Once soaked blend it in mixer along with ginger, cumin seeds, hing and ginger add little water
- Once it's blended add salt and whisk the mixture for 4-5 minutes. Keep aside for 15- 20 mins.
- Heat oil in kadai, we your hands and drop small portions of dal mixture in hot oil and fry on low medium flame so that it cooks properly from inside.
- Once it's golden evenly from all sides remove and keep aside.
- For kadi.
- In a bowl take buttermilk and add besan and mix properly so no lumps are formed
- In case you are using curd, whisk curd, water, besan properly for smooth buttermilk mixture.
- In a kadai heat oil add mustard seeds, cumin seeds, hing, methi seeds, grated ginger, red chillies, chopped green chillies, curry leaves and fry tadka on low flame nicely.
- Add the buttermilk mixture and add salt. If the buttermilk is sour you can add sugar to balance the taste.
- Cover and allow it to boil on low flame.
- After 4-5 mins switch off the flame.
- To serve take 3-4 vadas in a bowl, add hot dahi kadi and garnish with coriander leaves and serve it's a very nice dish to start a meal as it has all flavours π
