- Drain oil from pan. Add chopped onion and green pepper and saute till onion is opaque and soft.

- Add the tomatoes and simmer for approximately 10-15 minutes until sauce starts to thicken. Season with a pinch of salt.
- Meanwhile cook pasta of choice according to package directions.
- In a large mixing bowl, combine the parmesan, Basil, parsley and EVOO. Mix till well combined.
- Once pasta is done and drained, pour into mixing bowl with the cheese mixture. Add the sausage mixture. Mix well until all ingredients are incorporated well. Serve. Top with additional parmesean if desired.
