Lotha machu han is a spicy chili curry made of lots of chilies, brinjal and peas. This mouthwatering curry is hot and spicy and is an amazing side for steamed rice. I set straight out to research how to make Thai Panang Curry and decided to use Prawns (aka shrimp) 'cause … well … just 'cause.
Instructions to make Prawn and Bangladeshi straight-bean(lotha) Curry:
- Chop up 2 onions and add 2 cups of water to a pot with salt.
- Let boil on high heat until onions are softened and water is reduced almost completely. We are trying to almost congeal the onions into a paste. See below:
- Using a masher, mash up the onions like this:
- Add 1 tbsp of mixed curry powder and the prawns and mix. Keep cooking for another 5 minutes.
- Add the Lotha beans and cook further until beans are cooked..
- After 5 mins add boiling water from kettle untill beans are covered.
- Let cook on low heat for another 5-6 mins.
- Done :)
So this Penang Curry is sweet, rich and creamy. Traditionally it is made with coconut cream rather than coconut milk resulting in a thicker sauce that is just meant to coat the.
