Here is the recipe of my Bengali style Egg and potato Curry (Dimer Jhol), which is light and soupy and quite different to this Dim Kosha - Bengali Spicy Egg Masala. Dim Kosha or Hanser Dimer Kosha is one of the most satisfying Bengali style Duck Egg Curry. This exotic curry is full of flavours and quite rich in taste. It is slightly different from Dim er Dalna or Everyday Egg Curry.
Instructions to make Spicy duck egg masala / hanser dim kosha:
- Heat mustard oil in a heavy bottom pan and fry egg and potatoes when it change it's colour.
- Boil egg with generous amount of salt. Peel and slit.
- Now all the chopped onions, tomatoes, ginger and garlic in a blender and make a smooth paste.
- Now heat oil in a pan add cumin seeds fry until fragrant, then add the onion paste and fry for few minutes. Then add fried egg and potatoes.
- Now add the all spices powder and fry it until the masala are well fry and the raw small are goes on. Then add 1 cup of water and cover it allow to cook for 10 minutes in low medium heat.
- Once done cover the pan and switch off the flame. Keep on stand by for 10 minutes. This will help masala and eggs to incorporate the flavors.
- Serve it steam Rice and Enjoy.
Dim er Kosha is spicier, tastier and thicker than regular Dimer Jhol. Dimer kosha is a popular Bengali style spicy oily Egg curry, very much different from the rgular Dimer Dalna or Dimer jhol is light runny curry with boiled egg while Kosha means bhuna or slowly Serve Dim Kosha with hot steamed rice, roti, paratha or puri. Cilantro is optional, if you like the flavor. Dim er Kosha is a very popular egg dish in Bengali households. Some families like mine call it the dim er dalna.
