Karanji (Gujiya) / Diwali Sweet is a traditional Indian snack stuffed with mixture of coconut, dry fruits, sugar etc. Gujiya is a traditional Indian sweet often made during the festival of Holi. Instructions to make Cauliflower karanji(Gujiya):
- For cover: mix all ingredients and make a dough by adding sufficient water. Keep covered for half an hour.
- For stuffing : First make chilli ginger paste. In a deep bottom kadai put oil. Add mustard seeds when oil is hot. Add chilli ginger paste to oil. Saute for a minute and put turmeric powder and hing.
- Now add grated cauliflower. Cover it till half done. Now add salt and sugar. Again cover for few minutes till it's done. Switch off the gas..squeeze a lemon when it's cool.
- Add grated coconut and coriander. Keep aside.
- Now take a small ball size dough. Roll it and fill the stuffing on one side cover the other side above it.
- Make gujiya/karanji. Deep fry it. And serve hot with green chutney or tomato sauce. You can also make parathas with this stuffing.
