  1. Prepare 1 cup sour full fat curd
  2. Make ready 3-4 tbsp Besan/ Gram flour
  3. Prepare 2 cups water + more if required

  5. Prepare 1/2 tbsp turmeric powder/ haldi
  6. Prepare For Tempering-
  7. Take 1/2 tbsp mustard seeds/ Rai
  8. Prepare 2-3 Bay leaves/ tej patta
  9. Make ready 1/2 tbsp cumin seeds/ jeera
  10. Prepare 1/2 tbsp fenugreek seeds/ methi dana
  11. Get 2-3 dry red chillies
  12. Get 1/2 tbsp red chilli powder
  13. Take 2 tbsp oil/ desi ghee
  14. Get 1 pinch asafoetida / hing
Instructions to make Rajasthani Besan Kadhi:
  1. Take curd in a bowl. Add besan.
  2. Add turmeric powder and salt as required. Add 2 cups water. Add more if you want thin runny kadhi.
  3. Take a hand blender or a hand whisk and blend into a smooth puree till there are no lumps left.
  4. Now add the batter into a deep kadhai/ wok and heat on a low to medium flame. Keep stirring.
  5. Cook the kadhi at high to medium flames between for about 5-10 minutes with stirring on between.
  6. Meanwhile for Tempering, heat oil/ desi ghee in a pan, add mustard seeds.
  7. Now add bay leaf and let the seeds crackle.
  8. Then add jeera, once the seeds sputter, add methi dana.
  9. Add dry red chillies and fry for a few seconds till they change their Colour.
  10. Then switch off the flame and add red chilli powder. Add the tempering to the kadhi and boil for about 3-4 minutes.
  11. Serve hot with steamed rice or Roti or Naan. Or in Rajasthani style, with Pyaz Kachori.
