- Take 4 Tbsp Oil
- Prepare to taste Salt
Instructions to make Aloo Karanji:
- Take the ingredients required for the covering in a bowl. Mix them well, add water as required and knead a tight dough.
- To prepare the stuffing, take boiled and mashed potatoes in a bowl, add all the ingredients and mix well.
- Make small portions of the stuffing and keep it aside.
- Now take a medium sized ball of the dough and roll it out till it's thickness is equal to that of a puri. Place a portion of the stuffing in between (as shown below) and fold it to form a semicircle. Seal the edges properly. Prepare all the karanjis in the same manner and keep them aside.
- Heat oil in kadhai and add mustard seeds and cumin seeds. After they sputter, add the water, red chilli powder, turmeric powder and goda masala.
- After it comes to a boil, add the prepared karanjis and let it cook for around 15-20 min on medium flame. Stir it now and then. After it is done, switch off the flame and close the lid.
- After 5 minutes, serve it hot with ghee on top!
