The ingredients needed to make Dahi Vada:
  1. Take 1 cup urad dal
  2. Take 750 ml dahi / yogurt
  3. Take 1 tsp cumin seeds
  4. Take 3-4 green chillies
  5. Make ready 1/2 inch ginger
  6. Prepare 1 pinch asafoetida(hing)
  7. Prepare as required Water
  8. Get as per taste Salt
  9. Take some ice cube for brisk batter
  10. Get 1/2 cup Green coriander chutney
  11. Get 1/4 cup Sweet tamarind chutney
  12. Take 1/2 tsp Red chilli powder
  13. Make ready 1 tsp Roasted cumin powder
  14. Get 1/2 tsp Chaat masala
  15. Take as per taste Black salt
  16. Make ready as required coriander leaves
  17. Get as required Oil for frying
Instructions to make Dahi Vada:
  1. Soak the urad dal for at least 4-5 hours. Drain them.
  2. Grind the urad dal, green chilies, ginger, cumin with little water to a smooth fluffy batter.
  3. Briskly & vigorously stir the batter for five or seven minutes with a ice cube. This makes the batter more fluffy and light. As a result, you get softer and porous vada. A pic showing the consistency of the batter. Add salt also.To check this,you can drop a small amount of batter in a bowl filled with a water.Light and fluffy batter floating.
  4. Heat oil for deep frying. Either drop the batter with your hands or with a spoon in medium hot oil. Fry the vada in batches till crisp and golden.
  5. When they are still warm, add the vada in water (at room temperature) and let them soak for 18-20 minutes.You can see from the pic, that the vada has increased a bit in size as well as their color has changed.
  6. Press all the soaked vada and keep them aside in a plate.Beat the chilled curd/yogurt till smooth.
  7. Making dahi vada,In a large serving bowl, arrange the vada.Pour the beaten curd. Pour the green chutney and sweet tamarind chutney.Sprinkle with red chili powder, roasted cumin powder, chaat masala and black salt.Garnish with coriander leaves & then Serve dahi vada immediately
