Over the past few months, I have increased the usage of soya based products in my cooking even though my family isn†I learnt that to achieve the full potency of soya, its best to combine it with other foods and vegetables and it also ensures a complete balanced diet.
Instructions to make Soya chunks veg pulav:
- First put soya chunks into hot water for 2 minutes and then squeezed out the water fully this will make soya chunks soft. Next chopped all the veggies qnd keep ready Take a huge bottom pan and add ghee into it.
- When ghee is hot and cumin seeds, tej patta,cinnamon, cloves and black peppercorn to it when it starts spluttering add chopped onion,green chillies, and ginger garlic paste and saute till onion becomes soft and raw smell goes off of ginger garlic paste.
- Next add chopped tomatoe and all the spices and let the tomatoe become soft and easily gets smashed next add all the veggies including soya chunks and mix well with the masala saute it for a minutes and next add rice.
- After adding rice here I am adding boiled water so that my rice gets cooked fast and check the water as required while cooking and then when water is 90% soaked in rice cover the pot with the lid and let the rice gets cooked fully if u find rice required more water I can add and close the lid.
- And our delicious soya chunks pulav is ready only in 25 minutes serve hot with curd raita or with kachumber.
To be honest, both of us are not big soya fans, but this pulao was a welcome change from our usual menu. Veg: Paneer Peas Masala, Mushroom Peas Masala, Egg and Peas Kurma. The soya chunks pulao is an easy recipe to whip up when you crave for something fancy yet less cumbersome to cook.
