- Take a bowl.add all purpose flou,baking powder,curd,ghee and salt.mix well.there should be crumble texture shown in the picture.
- Gradually add water and Combine well.do not knead.cover and rest the dough for 15 min.now take a pan.add water and sugar.cook on high flame till sugar dissolve.add cardomom powder and kesar.turn the flame low.cook it till it become thick.
- Noe spread the dough on flat surface light hands.cut in two parts.place one part over another like this.now again cut like this.
- Repeat the process 2-3 times for flaky layers.dont over knead and press.divide flour in equal parts.
- Make small size balls and make dent in the centre with thumb.nw heat oil.when oil become light hot then place the balushahi in oil.all frying process should be done on low flame.after 1 min balushahi start floating.fry for 7-8 min on low flame.
- Cook from another side for 7-8 min.fry till crispy and light brown.prepare all balushahi.soak in sugar syrup for 15 minutes.garnish with chopped pistachoes.
