Grate the peeled raw potatoes into a bowl. The grating is usually done by hand and traditionally with a rosti grater with large holes, but a box grater will do nicely. Grate the potato and carrot into a sieve. Sprinkle the flour and lots of seasoning on top and shake the sieve so it coats all the veg. Remove from the oven when the chicken is cooked through and While the rostis are finishing off in the oven, fry the eggs to your liking, then serve with the zucchini/courgette rostis. Potato rosti is awesome. but can be a little tricky to cook well. You need to make sure it's crispy on the outside when fried. but also avoid raw potato on the inside.
