- Make ready 1 dry red chilli

- Make ready 1 tsp cumin seeds

Instructions to make Shahi Veg Masala Khichdi:
- Firstly rinse rice and dals 3-4 times and soak it in water for 15 minutes or until you prepare all the

- Heat oil or ghee in a pressure cooker or in a heavy bottomed pan and add whole spices let and fry for couple of seconds to infuse their flavours into oil.
- And then add mustard seeds to it. When mustard seeds start to pop and splutter add cumin seeds and hing.
- Fry them for couple of seconds till the cumin seeds change it's colour to deep brown.
- Add onion and ginger garlic paste and slit green chilli. Continue to saute.
- Now add vegetable and salt to taste and saute for a minute.
- Now add all powdered masala and saute on low flame.
- Now add all dals and saute for a minute on low flame.
- Now add rice and mix well. And pour water approximately 3 cup and mix well.
- Now add other ingredients and 1 boil.
- Cover the lid of a pressure cooker and put the weight on. Let it cook on medium flame for 4-5 whistle.
- Let the pressure completely before opening the lid. Last add finely chopped coriander leaves and mix them well.
- Serve this delicious and comforting bowl of shahi veg masala khichdi with yogurt/raita, papad, pickle, buttermilk and ghee.
