- Remove the seeds from Dates and Cut them into pieces. - Cut the Almonds, Cashew, Dried Figs and Raisins into pieces - Now either grind it, chop it in chopper or cut it in small pieces through food processor. - This dry fruit mix is a perfect mix to just bind the ladoos.
- Now keep a pan on and add ghee - Add Cardamom powder to it. - Now roast the Sooji in the ghee for 12-15 mins on sim. keep mixing it so that Sooji will be roasted equally from all the sides. - After nearly 12-15 mins now sooji is roasted fine and if you eat it now it will not get stick in your mouth and you will feel a crunchy texture.
- Add Cherongi, Muskmelon seeds and Watermelon seeds to the Sooji and roast it for 1 min on sim. - Now slowly add coconut powder and keep mixing it well until the coconut and sooji get mix well, don't roast more than 1-2 mins. off the flame now.
- Shift the Sooji in a bowl and add dry fruit mixture to the sooji.
- Slowly slowly keep mixing the dry fruit mixture to the sooji. As dates, Anjeer and kishmish are juicy dry fruits it will help in binding the ladoo at the same time the sweetness of these fruits will help us to make ladoo sweet enough. you can increase or decrease the quantity of dates and Anjeer based on the sweetness you need, the above-mentioned quantity is just enough for the types of Dates we have taken.
