- Prepare 1 Japanese sweet potato
- Prepare 1/2 tsp soy sauce

- Prepare 2 1/2 tbsp water

- Get 1 tbsp sesame seeds
- Get 1/2 cup of neutral tasting oil such as canola or grapeseed

- In a small skillet over medium heat, toast the sesame seeds by constantly shaking the pan or moving them about with a spatula. When they become fragrant and a few pop, remove and set aside.
- Peel the sweet potato and cut into bite size pieces and set aside.
- In a small bowl mix together the soy sauce, honey, water, and vinegar and set aside.
- In a medium skillet or wok, heat the oil on medium high heat. Add the sweet potatoes and fry them until they are golden brown. Remove and set aside.
- Let the wok or skillet cool down. Then, add the potatoes back in and add the sauce. Simmer for about 5 minutes or until the sauce thickens. Toss to coat.
- Sprinkle with sesame seeds and serve.
