Steps to make Kesar Dry Fruits Rabri With Sandesh:
  1. Rabri:To make it we have taken 1.5 ltr milk in a wok. It is a full cream milk. Heat the milk till it comes to boil. The milk Should not stick to the bottom of the wok so keep stirring the milk at every 2-minutes and make sure that the laddle goes down till the bottom of the wok.
  2. Let the milk boil when the milk has started boiling Stir it on high flame at regular intervals to make it thick.
  3. Thicken the milk but make sure you stir the milk at every 2-3 minutes so the milk should not stick to the bottom.
  4. Let the milk become dense. Take 10-12 pistachios and finally chop them. Take 10-almonds and cut them.The milk is dense now almost a litre is left now gather the cream floating above the milk on side of the wok.
  5. Keep the flame medium. Forming a layer of cream. Gather the cream on the sides everytime you see the layers of the cream forming
  6. Take care of the Rabri now cream is forming above the milk keep gathering it on the sides
  7. We now have very less milk in the wok but we need to reduce it a bit more we need only 250-ml of milk in the wok.
  8. Add cardamom powder-and mix sugar to taste +Almond +pista
  9. The gatherd cream forms a thick layer and tastes delicious. Turn off the flame and let the rabri cool down completely.

Add some water to the lemon juice now add lemon juice to the slightly warm milk in small portions strain the mixture through a muslin cloth and pour some cold water over it.   14. Chenna is ready. Transfer it to another bowl and start mashing it for 5-6 minutes
